Rosemary Garlic Chicken

1-2 tsps fresh rosemary, finely chopped
2 garlic cloves, minced
1 tsp butter {for the pan}
4-6 chicken tenders
pepper to taste {I used citrus flavored pepper that I bought in Texas, but black will work, too}
non-stick cooking spray for the pan, if needed



In a medium saucepan, heat butter on medium heat. Add rosemary and garlic to pan, and let sizzle for about a minute, but don't let garlic brown too much. Add chicken to pan. Sprinkle chicken with pepper. Cook approximately 4 min, taking care to scrape the garlic and rosemary from bottom of pan as chicken cooks to keep from burning but to also use on the chicken as a kind of rub while the meat cooks. Flip chicken and cook an additional 4 min or until cooked through. Chicken should brown nicely on each side. Serve with cooked pearl barley and a veggie or with a fresh green salad. Yum!

What is cooked pearl barley?

Callie, you can buy pearl barley in the bulk dry foods section of a grocery store {such as Central Market or Whole Foods, where you'd find loose/bulk flour, rice, etc}. You cook it like rice on the stove: 1 cup barley to 2.5 cups water. Rinse barley under cold water to remove any sediment and then bring 2.5 cups water to a boil. Add in rinsed barley. Lower hit to a simmer and simmer for 35 min, or until water is absorbed. Fluff with a fork. Barley should puff up and texture is kind of chewy - we love it!
